Ingredients
- 1 head cauliflower
- 2 tablespoons unsalted butter
- 1/4 cup cream
- salt
Directions
- steam the cauliflower until it is tender (about 10 minutes)
- drain and coarsely mash the cauliflower
- scrape the cauliflower into a food processor
- add the butter and cream (add the cream slowly to ensure that you end up with the correct consistency. The end product should be creamy but not runny.)
- process until smooth and serve immediately
